My Pancake Recipe
As a follow-up to my post on pre-mixing pancake mix, I am adding my homemade pancake mix to the blogposts. Admittedly, I do not measure much of anything, so I apologize if the measurements I give do not work perfectly the first time. Some tweaking here and there should be all that is necessary.
- 2 1/2 c. all-purpose/bread flour
- 1/4 c. oats
- 1/8 c. ground flax seed
- 1 t. baking powder
- 1/2 t. salt
- 1 t cinnamon
- Other things I might add: whole wheat flour, soy flour, wheat germ, whey, sugar, fruit, and/or nuts. Adding fruit or nuts will make the pancakes much more filling. Also, try using cream cheese and fruit sauce instead of syrup some time!
Whisk dry ingredients together thoroughly, then add 1 egg, 1/4 c. oil (or melted butter), and enough milk to get a consistency you are happy with (soupy for thin pancakes, e.g.).
